    Finally got a brew down using the MM2 mill set to 0.045 (factory gap). My efficiency is up to 72% - an improvement of 20%. Happy with that.. finally some progress! It might not be down to the crush alone (although certainly appears to be the main culprit) but I have improved a lot of things...

    MM2 .045" crush - look ok?

    I have just run the mill for the first time. I set the gap to .045 which is the factory setting - i had to set the gap myself as the unit came apart during shipping. Does this look ok?

    I got the impression you thought something is unusual about the water profile? The tap water in Auckland, NZ is all rain water collected in reservoirs. Btw thanks for helping out :)

    Based on this chart and after plugging the numbers into the Palmer residual alkalinity spreadsheet (found here) I deduced I should/would/could add 4 gr of calcium chrolride and 4 of calcium sulphate (gypsum) to 18L of mash water to brew the EPIC pale ale clone - EBC 18, SRM 9.4) Any thoughts...
