Decided on a porter- spice it up?

I vote you don't add any spices.

What Talley said goes for me too. Except I'm not planning to take a break, just planning to get more extract/grain brews under my belt and switch over to AG in time to brew a St. Patties day beer. Or at least PM-ing. I'm a mimic, a moron, a mimic, a copyer, an in-the-box thinker... What...

    quick drill question

That's one way to do it. Some folks are using the condensation drain hole for that purpose, if one's available. Others are squeezing the CO2 tank into the inside of the kegerator with the cornies.

    Edmund Fitzgerald?

Hey, sometimes I'm the bird, sometimes I'm the statue... Oh yeah, my SWMBO tried it a few times but finally gave up porter after a bad hangover...

Landhoney -- do a search on this site for Edmund Fitzgerald -- I think you're caught halfway between understanding and being baked...

    Greetings, Sarasota, FL!

Nice, welcome Sarasota! I'll be visiting for a few days from 4-7 November -- you'll have to let me know about some great bars/pubs/clubs, especially if they have great live music or hot chicks dancing, along with a few non BMC beers available!

    What's the right thanksgiving beer?

If it needs to be ready in 4 weeks or so, you're looking at keeping the OG to something under 1.050, maybe even under 1.046. Also, no "funny stuff" that takes time to mellow out in the bottle --- honey, molasses, spices, etc. I say brew something like you originally thought, but plan on it...

    Partial Boils and Hops?

Yes, straining out the whole leaf hops especially.

Who else bought 2 pounds of pellet hops

Yeah, duh, I'm such a putz -- my big order from NB came today and sure as sh!t I had ordered a pound of amarillo. I got them, and a pound each of cascades, summit, galena, and sterling. Way overboard, but I'll 'git 'er done'!

    stressed.

I missed this whole thread til now, glad to hear the stress is behind you now, Bird, and that your daughter is well on the road to recovery! Now -- start thinking about the Sox!

    Bulk grain

Wheat -- it went up to like $9.50 a few weeks back. Used to be about $4. Supposedly worldwide demand, draughts in Auz/NZ, the ethanol thing Bird mentioned, etc., etc..

    Bad Craigslist deal...

one word --- DIPSTICK I kind of seewhat cheese is saying - after a couple of weeks "Gee hon, I don't know why I can't sell it at that giveaway price. maybe I should just keep it...

    wheat beer questions

Use a blowoff tube! Wheats with hefe yeast can ferment very aggressively! I use a 6.5 gallon carboy for my hefes and all but 1 batch has actually pushed foam up into the blowoff tube. Use a large plastic tube with a tight fit into the neck of carboy -- sanitize the tube first - then put the...

    Tron's Better Bottle Warmer

Cool, rated for 15-40 gallons - so it shouldn't have too much trouble keeping 6 gallons warm in a basement in the 50's. Might be tough in a garage, though!

    Taste this... Maine Micros...

Oh, thanks for the post on the pumpkinhead, Adolphus! I still have yet to try any pumpkin beer (drink or brew) -- maybe in the next few weeks, seems like there are dozens of them out this year.

    Taste this... Maine Micros...

I'm not all that fond of the Shipyards, I wonder if the yeast is why... Then again, I tend to order it on tap when I'm in the boonies of Maine and it's the only halfway local beer they stock -- usually the only non BMC -- I wonder if I'm just getting stale beer...

    Hefe!

I used HB_99's recipe the first time I brewed a hefe -- it's easier than mine, and like he says it's a great session brew. (Thanks again, Bill!) But after a few batches I've come to love the Franziskaner clone - since the Franzi is my favorite, this one's my most regular beer. Also, read up...
