    Nigari as coagulant for Ricotta

    Has anyone tried nigari as a coagulant for ricotta from whey? Lemons are good but expensive for large batches, vinegar leaves an undesirable flavour so I wonder how well nigari would do the job.

    If you haven't decided on anything yet - I've been using Ektar 100 and Unicolor C-41 (http://www.freestylephoto.biz/10123-Unicolor-Powder-C-41-Film-Negative-Processing-Kit-1-Liter) with good results. I still prefer scanned film to digital.
