    98% efficiency. Is this possible?

    How did you mill the grain? Do you use a flour mill? I use a Champion set very close to the course setting. By changing it towards fine the efficiency goes up along with the astringency so I shoot for about 80%.

    That's quite an accomplishment Cider, particularly inspiring as it is in Maine (with similar winter conditions). We use a Kettle Pizza. It does great pizza and naan but that oven of yours could cook for a whole neighborhood on one firing. Very nice.

    Bernd's always makes good looking bread. The site is a great motivator. If you make the bread be aware the salt in the ingredients doesn't get added in the preparation. I added it after the autolyse. I need to modify the recipe as my rye sourdough is sluggish.

    If the pressure cooker doesn't improve the flavour it would just be an inconvenience in this case. The gas stove needs to be watched, although for a shorter time, while a slow cooker doesn't need anything but power.
