    Do it. I've been doing no chill into anvil stainless fermenters. I do a 40min boil and go straight to the fermenters. Let it sit 24 hours and then pitch yeast. As I said before...you will need to adjust your hop schedule. But its worth it IMO when it comes to saving time.

    You are good with 6 generally. Both my Anvil and Fermonsters are 7 gallon and I haven't had any issues with 6 gallon batches. I brew mainly Amber's and APA if that matters.

    I would keep the grains and do a new starter. I've kept grains for months in your very situation...LIFE happens. Lol. For the starter it's simply cheap insurance to make a new starter so u know that the yeasties are actively doing their thing.

    Yep...that's how I've been using mine for about 3 years. I had big plans......lol. I think I will add space for a 3rd leg by moving the gas outside the fridge. I'm actually worried that if I go away from the picnic taps and go full blown keezer, I won't be able the keep the "regulars" out...

    Yeah you won't be able to do 2.5 gallon batches. For a 10 gallon pot you are roughly at 1.5 inch per gallon since the pot is 15 inches high. Very rough math here. You will be at a minimum of 3 inches from the bottom with your basket. So u will need 4 gallons of water to get to six inches...

    You should be fine by leaving in the kettle. As another brewer stated you need to adjust you hop schedule. This is critical for hop forward brews. Not so bad for malt forward. You generally have to adjust your hop schedule by 20 minutes. For example....a typical 60 min hop addition...

    Brown malt should do the trick. I recently started playing with it. The stuff seems pretty potent. I used 12oz in a modified moose drool clone and I felt that is was maybe too nutty.

    When mash is done....I lift the malt pipe...sit it on top of the kettle and I add sparge water on top of the grains for sparge. I only use hot tap water. Normally about 1.5 -2 gallons to get to pre boil volume

    I have the one without the pump that I use for my 5 gallon batches and I don't use any additional accessories. I run off about 1.5 gallon every 30min during mash. My mash effeciency seems to be around the 80% mark.

    +1 I'm finishing my set up and this is exactly what I did this weekend. Installed 4 stainless steel bolts upside down with a stainless nut inside the basket and another on the bottom. Super sturdy and allows for adjusting for the OCD crowd out there.

    That looks similar to the grain bill of one of my APA. 9# 2row 1# flaked wheat 12oz c40 I get roughly 80% effeciency on my system
