    If bottling uncarbonated beer from a bucket into a bottle with a bottling stick it's better to do it warm, less oxygen pick-up. If packaging carbonated beer using counter pressure you need everything cold or it doesn't work well.

    Thanks. It's a nice colour. I used dark muscovado in the end because I didn't have the light muscovado I thought I had, it'll be present in the taste, don't yet know if that'll be a bad thing. I got bang on 22 litres and 1.040 as well, which doesn't often happen.

    I've used Chevallier malt a few times, your assessment is good. There are some legacy hops around. Goldings Cobb, for example, is sometimes available. Why not naturally carbonate the beer?

You're also right about the yeast, I thought I would try fermenting a bit warmer and not under pressure, see if I can get the yeast to emulate British yeast and produce some esters.
