    Can't do GIMP

I think you can ask Marcellus about him. :D

    Surface scum fell, problem?

Doesn't sound like the pellicle. The pellicle is usually like a coating that doesn't move much and covers the entire surface. You'll know it when you see it. I am not sure where the advice to rack comes in, it doesn't sound on par with anything. These pellicles take a long time to form and do...

Keeping an infected batch for mixing.

I dunno, sometimes the beer itself can be a pleasant surprise if you are into that kind of thing.

    Easy Onion Baji.

Roger that. I understand cooking with little added salt. We don't eat processed foods either.

    Rogue beer! What's your favorite?

We pretty much pay around $10-$11 bucks a six for most beer here including Rogue. Not sure why though.

    Rogue beer! What's your favorite?

I dunno, in spite of some of the negative comments I think the Nutbrown and the Mocha Porter are very very good. Not everything I've tried from them was stellar, but in general they make some solid beer. As for case prices, they are pretty much in the ballpark with equally good or even lower...

    Easy Onion Baji.

Orf, have you tried salting them slightly just after cutting to omit the squeezing step?

    Basic curry

I made a really cool curry dish last night. In a large pot, heat 2 Tbs Ghee, add a 3" Cinnamon stick and ~1 to 2 tsp Yellow Curry (I make my own as well) and 1 Tbs Minced Ginger root. Stir that briefly and then add about 2 medium cooking Pumpkin (Mine were the size of a large Butternut, in...

Clear candi sugar vs table sugar?

Pretty much what's been said already. Table sugar where 'Clear' candi is cited. Inversion is easy and carmelization with table sugar, a little acid, some water and then cook it. Keep the heat low and let it roll. I usually do it on brew day as the wort is starting to boil then I just add that...

    Stein Beer

Hey pardon my ignorance, but what exactly is the main purpose behind the design of a Stein. (Hey that rhymes :D)

    Salutations from Central PA

Really? I hadn't heard of that, thx. Delta Blue's Home Brewing Supplies is a "Local" home brew supply but it is internet only. I have ordered from there in the past, but it's a haul from State College if you don't want to pay shipping.

    My winter project nooooooo!!!

You can get all sorts of stuff in there that thrive on the brew post-ferment with saccharomyces cerevisiae. White floating spots are something to be on the lookout for, it can be the beginnings of a pellicle formation. It could also be nothing to worry about, proceed as usual. Even in the...

    Faucets: Perlick vs Creamer ??

No the Perlick is simply a smooth pour. I wouldn't buy any other taps tbh.

    Faucets: Perlick vs Creamer ??

That's always the thing with compromise, no? If you only want one gas tank (space, money, etc) then a creamer faucet is a viable option. Granted it does neither what a nitro nor an engine do, but it is an improvement towards creating a moussy head.

Suggestions on what hops to grow

Yeah you really only need one bittering. One like Colombus is really nice because it can indeed be used in other additions, especially mingled with Cascades it is really nice.

    Faucets: Perlick vs Creamer ??

I have both. Apples and Oranges. The Perlick for standard pours, Creamer for Stouts or what you want to mimick a Nitro head or Pump. I really love the Creamer for my Oatmeal Stout, it takes it to a new level. As mentioned above, 4:1. :D I voted Perlick because it is a better faucet and is...
