    So, what category of sparging is it with th Robobrew? In my case, I use the top screen. After lifting the basket, there is a pool of water on top of the grain. It slowly drains. I just keep adding water until there is a volume I am happy with.

    You could do that. I bought the jacket with mine, which insulates the kettle. To me, a bag seems like it would be a pain to deal with, and I get along with the basket just fine.

    I'm guessing closer to 1.3 qt/lb. In reality, I mashed in the grain, and just added as much water as I could. So it wasn't exact. It was right on the verge of overflowing the holes in the malt pipe the whole time.

    When sparging, the basket is in the way of trying to see the volume. I guess, and lift the basket occasionally. So a sight glass would be handy.

    What is the highest I could ferment a Dortmunder?

    If memory serves, the top temperature range for 34/70 is in the low 70’s. 72*? I’ve done a bunch of batches using it in the last 6 months. Once I figured out to pitch 2 packs of dry yeast instead of 1, it worked great. I just sat the fermenter on the basement floor.
