    Cheap corny kegs, or, "I've made a huge mistake"

    I typically deal with sankeys so elbow grease isn't an option so I use lye. Be cautious with it but it will clean them with no scrubbing in a matter of minutes. Just in case you run into a couple that are stubborn.

    15 gals of IPA planned for Saturday. That's 60 gals in July. I put AC in garage/brewery and it is really paying off. Otherwise, I'd never brew this much in the summer.

    No I don't think it will dramatically change it. If it changes it, which would be slight, it would make it more fermentable, drier and less sweet. With the temps and times you are talking about, I doubt it would be even noticeable.

    You would essentially be doing a step mash. It will change the profile but it would depend on style as to whether or not it would be bad. I step mash a lot and I do something similar on my electric rig. I bring it to the first step and then a bit into the step set the temp to the next step...

    I just put 15 gals of American Lager in the fermenter, kegged 15 gals of red, kegged 15 gals of pale ale, cleaned the rig, cleaned all the kegs and fermenters, and smoked a roast. Time for a break and a beer.

    What is the shape of your boil kettle? If it's tall and narrow it may be possible. I know on my kettle a gallon is about an inch of space so 19 is not too crazy with fermcap. If your kettle is short and wide, probably not.

    Cereal Mashing and Step Mashing

    Wheat gelatinizes at mash temperatures. A cereal mash is unnecessary. Depending on what your other base grain is, you should have sufficient surplus enzymes.

    American Light Lager Ahab's Prize Light Lager

    I cool to, pitch, and ferment at 49. I let it ferment till completion and don't do a d-rest or change the temp till I lager. I lager for 1 month at 32. Hope that helps. Drinking a glass of this right now. Great beer for warm weather.
