    Blow out

Very common, you can eliminate it by always setting up a blow off tube. Very active fermentation can clog the airlock resulting in a blow off mess. You should be just fine because the off gassing kept oxygen from entering your fermenter . Lesson learned!

Guess I should have posted an update, everything you say is correct. I have abandoned the peltier system as impractical.

    Azaca hops

Anyone Dry hop with Azaca? Doing a blond and want to add some zip. I've used Citra with success but have heard good things about Azaca and thought I might give it a shot dry hopping in the keg.

Building a new house... Help with my brew room!

Cheyneco, I have to lift carboys to move into fern chamber and if I bottle I raise the bottling bucket above the countertop so that I can bottle on the counter. I also plan on using the hoist to lift the kegs to the second shelf in the upright kegerator.

Help: Why do I occassionally have zero head on kegged beers?

I am having a similar problem with a dry stout. I have blamed the problem on #1 the recipe #2 the mash temp which I now know was in the upper range. Am patiently waiting for info to make sure I don't have this again.

    Fuller body

My understanding is that by mashing at the higher temps 145+ you create sugars that are less fermentable, thus the beer finishes at a higher number. Less sugar conversion = lower alchohol and fuller, sweeter beer. Please correct me if I am mistaken!
