I think this point can't be made enough. Just because the book says two weeks make sure it is done fermentation. Like said above take multiple readings two days apart. If you don't there is always a chance that your bottles will explode and that is no fun. Big mess no beer.

For a mash tun 8.5 is really going to limit the ABV of your brews. You need a minimum of 10 gallon tun and most wished they had gone to 15. You can get away with 8.5 for boil kettle but you will really need to watch for boil overs

I hooked mine up and used it over the weekend and it worked great. I currently have the mash module and the tower itself. I am going to ivest in the other module very soon. I had no issues with the ignition no fails at all. It is a great out of the box system.

I just bought one of these today and finished putting it together. For the mash the sensor is in the stand so as long as you can keep it flowing over the sensor I don't think it would not be able to handle.
