    I know the OP already ordered his but I thought I would weigh in on the SS. I have had it for two years, I like the updates they have made to the new models. My biggest complaint it is a beast to move but I don't need to move it often. It works great.

    Newbie, First ever Brew.

    Careful with bottling after 7 days. If the beer isn't finished fermenting it is a good way to get bottle bombs. I would wait two weeks at minimum and ensure your gravity readings don't move for three days. The hardest part about being a new brewer is patience.

    Also, beer will taste completely different after carbonation happens. Watery may mean thin which is going to help once it is carbonated. Did you do a full volume boil or did you add water to the fermenter?

    New kettle

    If you are looking at a kettle for a mash tun then I would do 15 gallons for the tun only. Gives you more room for larger beers. The boil kettle 10 gallons is all you need for 5 gallon batches. That is what I use. I have a 15 gallon mash tun and two ten gallon kettles for boil and sparge water.

    Yes, unless you want to split your mash the tun capacity limits the amount of grain. Even the above was done in a 15 gallon kettle. Depending on which system you are looking at. Most are 10 gallons.
