Cracked my first bottle of this open while brewing..... Holy crap. Awesome! Not sure how much of the honey flavor came through with the original recipe but I swapped honey for honey malt and brown sugar, and the little bit of a sweet hint balances well. Holy moly OP, amazing recipe. Thanks...

So, bottled this last Sunday. I pulled a tiny bit to taste test, then immediately sanitized a glass to dunk in and pull half a pint out. Flat and luke warm this beer is still awesome. I was really impressed how balanced the hops and malts were. I can't wait for it to carb up so I can be upset...

My batch has been bottled for just over a week, I KNOW it's not carbonated, but it's killing me wanting to crack a bottle open and try it finished. Damn you patience, damn you science, why can't you work in my favor?!?!?!?!

Well. I decided to go on with the recipe as I drew it up, simply for the sake of having a starting point. Brewed it this morning, it's in the primary now. Mashed at right about 148 the whole time. Ended up putting the Centennial in at 5 minutes before flameout and let it sit about 10 minutes...

I am in fact thinking of holding the C60 back, or maybe decreasing both the carafoam and C60 in equal amounts. Picked everything up today and planning on brewing tomorrow.

I'm planning on making a 14% beer in honor of the furlough.... It'll be my "night before my furlough day" choice of drink. Haha.

I'd recommend the honey malt to go with the brown sugar as well. Then you'll still get a sweeter flavor depending on how much you decide to use, and then the brown sugar will rack up that ABV as well....
