Beer gas (25% co2 75% nitrogen) is only $20 for a 5lb bottle at my local Airgas.

I'm planning on adding my 5th tap to my keezer and am wanting to set up a stout tap. So for those who use stout taps on beer gas, do you carb on straight CO2 then serve on beer gas or is 25ish percent CO2 in the beer gas adequate to carb a stout at the higher pressure?

As gelatin should be used during cold crashing/kegging, I do not use an airlock. A sanitized piece of foil works just fine for me. Some people say they should still be used but you are getting suck back and an air bubble passing through sanitizer isn't actually going to sanitize the air. So what...
