    you might want to try "joe's ancient orange" recipe. it's an easy one to make, uses storebought bread yeast, and is ready to drink in 3 or 4 months. gives you something to drink while waiting for the traditional mead ages. it's won two competitions for me so far.

    the point was that alcohol calories might be metabolized differently than carb calories. a calorie is scientifically defined as an amount of energy stored within a substance. biologically they are not all the same.

    i brew in my carport. i have a lightweight tarp strung up overhead to keep off the sun and sometimes the rain. (be sure it's rigged so the rain runs off. if it collects in a sag it WILL destroy the tarp!)

    if it's a stuck fermentation and you have an attenuation problem: 1. if you are using distilled, RO or otherwise mineral poor water, you can add yeast food or use just a carbon filter or add whatever nutrients you need. 2. beano can convert unfermentables, but i've heard that beano can go too far.
