    Stuck ferment that wasn't

    I seem to have a stuck ferment with a 1.122 OG Cuvee wine yeast supposed to handle 23%. It froze at 1.062. Repiched with another high gravity wine yeast, no drop in gravity.     Use extra light or ultra light DME. You might also consider using honey or rice extract to raise the ABV.:tank:

    Holy Crap!

    Picked up on a news bit from Norway. A woman used her water tap to find beer flowing. Seems a bar downstairs hooked the keg to the wrong line. Almost heaven. But the beer was a little watery.:drunk:

    Either should work well. I also like Kent Goldings for dry hopping...aroma.

    I second David_42 suggestion. Only thing is I would use a different ale yeast, probably a dry type. Sounds like your yeast may have stalled before bottling. I have a similar problem with a 1.122 OG. FG doesn't want to go below 1.052 and too sweet. I used a high gravity yeast.:drunk:

    Use of table sugar can give that result as well. Best to buy extra light DME and use it in place of sugar.:mug:

    My experiences are with the caps holding and glass breaking most frequently about 1 to 2 inches from the top. But can also break at the neck flare.:drunk:

    Kent Goldings is one of my favorite aromma hops. For bitter and flavor: Williamette, Cascade, Northern Brewer, Magnum and Galena are all very good.:tank:
