If the Belgiums simply roll open the roof and let their beers get infected by the natural forces, just how much contamination can you get away with? I imagine quite a bit. Considering this method was used for the first few thousand years of brewing, natural fermentation worked out pretty well.

I had a pilsner I thought ruined. Turns out it just needed some more time to age. Lagers and pilsners both take longer to fully mature than the usual ales. A good rule is to never give up on a brew until it's at least 6 months old. It's suprising how time works everything out.:cross:

Shame it is illegal to sell home brew. I am already at a point that I could sell everything I make. I have several people that are going to start up the hobby. Should have some good exchanges.

Jim Rossies' Hop Mothra kit from www.MooreBeer.com , with 1.5# added DME. This seems a kick ass on ABV too. It's Jim Nellsen's Hop Mothra though. Great brew!

Just tried MoreBeers' Hop Mothra. My best yet home brew and an Ipa type. Good I brewed 15 gallons of this one.:cross: I added a bit more DME to the recipe.Definitely worth a try.

They're natural flavors. I would suggest adding in the last 15 minutes of the boil. Pie filling works well too. I suggest putting it in a mesh bag and remove before racking to secondary.:tank:
