Hard Cider still fermenting (over a week)

Recipe: 2 lbs DME 3 gallons of Apple Cider ~2 gallons of Apple Juice ~2 teaspoons of cinnamon to smell 1 packet of ale yeast (was in a red package, cant remember the brand) It took about 48 hours to catch and start fermenting with a couple of bubbles a second (like any normal brew)...

Smoke in the Water Brown Ale

I recently tried a smoked ale. I used a pound of smoked grains from the homebrew store, then WAYYYYYY overdid the liquid smoke. At the time, I didn't know about the 2 teaspoon recommendation and ended up putting 1/4 cup total in. Now it looks like im going to have to blend it with another brew.

May have overdone the smoked ale. Need advice.

So, in a quest to recreate one of the beers entered into the Sam Adams Longshot competition a year ago, I tried my hand at improvising a recipe for a smoked ale. Steeped a pound of smoked grain, used 6 lb of DME, 1 lb of rice syrup solids, 5 oz bittering hops (hallertau) and 2 oz of Saaz...

    blackberry wheat

In case anyone is curious, I used a modified version of the StoutBilly's recipe that can be found on www.stoutbillys.com, under "Blackberry Wheat" I used a pound of the carapils for the grains, 5 oz of dextrose for priming, and 3 one gallon freezer bags of berries that I thawed, blended, and...

    blackberry wheat

I did a blackberry wheat beer about a month ago and it turned out AMAZING. Lots of blackberry aroma and a super smooth taste to it. Best beer I have brewed so far. Did you use real berries or flavor extract?

    Racked onto fruit...........no secondary fermentation

Thats what I'm hoping. Either that or I got a huge wiff of C02, and that happens to be what it smells like.

    Racked onto fruit...........no secondary fermentation

Crap. Well, I took a gravity reading and it was 1.012 (no higher than it was before I added the berries) so I racked into my carboy and I'm gonna give it a week or two. One thing that stood out to me was the distinct bitter smell it had. Any comments?

    Racked onto fruit...........no secondary fermentation

So, after the primary fermentation finished for my summer wheat, I racked it onto about 1 gallon of blackberry puree (blackberries sanitized with a campden tablet). It's been over 48 hours without any airlock activity. I haven't taken and gravity readings after the racking, but should I be...
