    Not the best thing to use. A bucket leaves too much head space. I would rack back to the carboy.

    Kegging Q: 4 days at 20 psi, I day at 30 psi, still flat?? Why??

    This may be a silly question, do you have the co2 line open? I've forgotten to open the line and set the pressure. ( hate to admit that).

    Beginner's Q #1: Cold water in fermenter (partial wort boil)

    When ever you are adding water after the boil you want it to be "clean" and sanitized. No chlorine, etc... What i like to do is boil some water the night before and put it in the fridge overnight to cool. Then I have cold sanitized water to add to my wart. Really helps it bring down the temp...

    I would also "burp" your keg a couple times a day to to release the excess pressure to help reduce the carbonation. The first time I kegged I over carbonated and that's what I did. It only took a couple days.

    As far as conditioning beer, it doesn't matter which method you use. As far as carbonating the beer, the method you use will very greatly. Bottling being the longest at three weeks. I've done the quick carbonation method before but ended up over carbonating it and had to goof around with it...

    I knew I couldn't wait that long, that's why I went for legging right from the start! Congratulations, it's very rewarding to brew your own quality beer!!!!

    JAOM....yet another thread

    Cold crash it. Fruit will drop in a day. Be very careful, any movement can cause the sediment to rue loud your beer. I would suggest just leave it. The mead needs to age any way.

    It's an Irish Red. More bitter isn't necessarily a bad thing (in my opinion).
