    Grainfather for Gluten Free Brewing

I took the plunge and purchased a Grainfather G30 Connect 220V so that I can do rising temperature mashes. I wired up my 220VAC plug last weekend while it was being shipped. I am hoping there are still some gluten free brewers viewing this forum that have experience with the Grainfather! I...

    Munich Dunkel Lager

Was it cloudy when it went into the bottles? If so, it may not be finished. Just to be safe, I would store them in a way that they are contained if they blow their tops. What yeast did you use?

RIMS Tube Stand & Mash Tun Mod

Every little bit could matter, but the surface area of that RIMS tube is so small compared to the mash tun I cannot imagine that is a big factor at all. Thanks. I am sure that is a basic heat balance assuming ideal insulated conditions and then applying "vessel heat retention" which we have...

RIMS Tube Stand & Mash Tun Mod

So with the increased efficiency I am expecting that I could get down to about 15lb grain bill for an 8 gallon batch. With 1.5 grist ratio, I would be just shy of 6 gallons mash water. From your tests, using this, do you think the 120VAC (14A) heating element will do the job or will I struggle...

RIMS Tube Stand & Mash Tun Mod

Thanks! I have a 14 gallon boil kettle, a 10 gallon kettle I use for a hot liquor kettle, and a 14 gallon conical so I have been doing brew days that produce 8 gallons of finished product. Brew days are arduous enough that I like to put as much in the fermentor as I can reasonably handle moving...

RIMS Tube Stand & Mash Tun Mod

Great video. Thanks for sharing. I am in the planning stage now for changing my setup to be able to do rising mash. I am considering options such as the Grainfather or something like what you have done. The RIMS system that you are using is attractive because it is scalable and would utilize...

Next batch will get quinoa instead of Buckwheat! Will look into purchase of grainfather or something similar in the spring!

When you use quinoa, do you just use unmalted grain from Whole Foods or something? Something like 2 lb in a 5 gallon batch like is normal for Buckwheat? I now have the Ceremix Flex enzyme but don't have a convenient way to implement a rising temp mash yet. Might just have to brute force it by...

The way I read that is that they are giving the recommended range which is huge. The right column is "max", not recommended. In the video, he states that Ceremix Flex is relatively sensitive to dosage and recommended not going to the max. I expected that most would maybe go somewhere in the...

What Ceramix Flex dosage are people using? I know they said the dosage varies depending on how you want the mash to finish, but I don't remember seeing any dosage recommendations to start for typical styles. Anybody have some advice? It may be some time before I begin brewing with it, so I...

Latest Favorite and Next Brew Plan

I did some calculations and as the video from post #6 discusses, it is just not practical to get a 3 step mash without a system that allows heating. With infusions only, it just does not work well because the final rest is so high. I have found that below a grist ratio of about 1, the mash is...

I watched it. Good info. Will have to get some Ceramix. Probably try it on a smaller batch first. Going to make a purchase soon!

Brewed another batch today and used basically the same relative enzyme proportions above. I went a little higher on the ml/lb because lately I am going a bit higher on the grist ratio (about 2 quarts/lb after the temperature drop infusion). First rest with Termamyl for 30 minutes and second...

    OG reading/fermentation

Good that you are getting strong activity. The problems I had with Nottingham were that on some batches it was slow to start or just wouldn't finish. Stayed wicked cloudy for a long time. Yours started strong and hopefully you won't have a slow finish. I would carbonate on the high side of...

    OG reading/fermentation

I did not have good experience with Nottingham on sorghum based batches. Hopefully you will get good results on this batch. You may need to pitch more yeast if it does not take off. Post your progress.

    OG reading/fermentation

The OG is really high. It will probably finish with very high alcohol content. I recommend staying around 1.060. It will probably be fine though. What yeast did you use? A yeast that is not particularly alcohol tolerant may not finish low, which could end up being good depending on what you...

Zero Tolerance Gluten Free Brewing Wiki

Not sure. A lot of us used it way before Termamyl came into view and it was a game changer at the time because it worked and you could get it. I have used it ever since. Then adding Termamyl for the high gelatinization step provided a complete solution.

Thanks for sharing. I have he link saved. Interesting that they don't list the Diatase enzyme sold by E. C. Kraus. I would think this one would be listed as it is readily available. The information with the Diatase enzyme states that it serves the same purpose as alpha and beta amylase...

In case anyone is interested, the summary sheet for my latest batch is below. Note: I put 9+ gallons into the fermentor and kegged 8 gallons, so keep that in mind when looking at the amounts.
