    Always crush campden tablets - then rack your cider on top of the powder. Trying to stir them to dissolve in a glass carboy isn't easy!:D

    It doesn't sound good I'll admit. As it was a UV treated juice you didn't need sulphite but the amount you added and the time lapse before pitching yeast wouldn't have made a difference. What temp are you trying to ferment them at? I'd guess fine if you're done a stout recently and it's not too...

    Never understood the 'chilli thing' with men really. Why do we love it??? I've grown/dried/made pastes to freeze etc with chillies using mainly Asian/North African/Far East recipes. When I can get my hands on a cheap tortilla press and a comal I'll start looking far south west too!:D

    parsnip wine- weird effect please help

    Sulphites and sorbates are the main 'Added Chemicals' used in home wine making. Both are perfectly okay to use if you follow the instructions properly. I'm no fan of 'adding chemicals for the sake of it' but always use sulphite (Campden) in my wines (and any other brew based on whole fruit)...
