    When to bottle wine???

    If you plan on storing it over time the best conditions are a constant temp (55-60deg F) that doesn't fluctuate beyond a few degrees +/- and in the dark. I can't get my temps that low and store at a slightly higher temp (but still constant and in the dark).

    Quick Cider Fermentation

    2 weeks in primary certainly won't hurt your cider. 4 Weeks for secondary is okay (I tend to do more) but then give it at least 6 months for aging in bottles for better results. Cider needs much more time than beer.

    My Cider is too dry

    If you don't want to carbonate it by priming the remaining yeast then use campden and sorbate as Rod mentioned and then sweeten with sugar/apple concentrate - NOT DME. Malt and cider don't mix well.

    What are you drinking now?

    A La Trappe Blond - (I've already drunk a Dubbel by them first tonight!). I'd drink it more often if the price wasn't so high. However it does come in fantastic ceramic style bottles which will work great for both home brewed 'abbey style' beers and 'farmhouse' ciders. :)

    Boring, BORING, BRO_O_O_RING!

    Mead's an odd thing - You either love it or just brew it for friends!:D Yes. Either/Or. Yes, my last one cleared really quickly though - However as it's a dry mead (but only about 10% abv) I'm aging it for a lot longer than the 'watching the airlock' - I reckon 3 years.

    Thanks for reminding me Guys! I've just tasted one of mine (my Ey Oop! Version 2) that i've been conditioning for a few months that i'd almost forgotten about. Very tasty it was too! I'll save the rest for Christmas! :D

    2 Questions

    As HB said if it's clear it doesn't need any clearing agents. Fully synthetic corks just need a quick soak in a 'no rinse' sanitizer I'd have thought.

    Equipment?

    With a cider you don't need to boil it and the 'krausen' isn't usually as big as the beer version but a 5 gallon bucket is too small - the 6 to 6.5 gallon bucket you mention would be much better.

    What commercial beers are in your 'fridge?

    Pulled a Chimay red, a Chimay blue and 2 big bottle Leffe Blondes out of my fridge a few hours ago to bring up to drinking temp and my fridge is now bare - there is food in it but I don't count that ;)
