Nice recipe Roland! Do you ever do the seafood version you mentioned?

    Pickled eggs--recipe?

I make them all the time. The recipe I use is slightly different - just spirit vinegar (no water or salt) boiled for a few minutes with the pickling spices and when cooled pour over the boiled eggs in a sterilized jar. Seal and store in the fridge for 3 weeks before trying. Pickled chillies are...

    yeast starter with dry yeast?

Dried yeast contains many more yeast cells than the liquid form. I use safale S-04 in ciders, hard lemonades (and also in beers previously, but not now). It's a neutral tasting ale yeast that I've never needed to re-hydrate or use a starter with. I'd go with a liquid version (with a starter)...

    yeast starter with dry yeast?

Dry yeasts don't need a starter (unlike liquid yeast) - just pitch and wait.

Turn a 3 gal Carboy into 2.5 w/ Glass Marbles?

Do you win the marbles? Also have you taken into account the diameter of your carboy opening to ensure you can get the newly won marbles in? ;) I've heard sanitized marbles offered as advice but i've never known anyone either actually use them or wish they'd used them when brewing. I'd relax...

    Fess up! Round 2...

El Pistolero logged on in the last few weeks. I spotted it at the time - as the bird said 'Last Activity: 01-10-2007 04:03 PM'- I checked his profile and he was in 'private messages' and quickly went. He seemed to be trying to get a 'cooking forum' together (I found it via his own site)...

What's the longest you've left it in secondary?

You'll be fine - The CO2 production subsides but doesn't create issues unless you keep opening the secondary to allow air in.

This quote makes me smile! Cheers Ed!:D

    10 years ago today

I already try and use z's on here to avoid confusion. However I over use extra 'o's and 'u's to compensate......;)

How much Brown Sugar for thiis cider?

Personally I'd go easy on brown sugar. It's not like corn sugar which can be added to simply boost ABV. The molasses in brown sugar add extra flavour which can easily overpower the taste of the cider.

    What are the chances?

Chill one, open it, pour it, smell it. If there's nothing bad give it a taste. You've nothing to lose!:D

    Made me laugh

Reminds me of this one:- While I was driving down the M4 the other day, (going a little faster than I should have been) I passed under a bridge only to see a copper on the other side with a radar gun laying in wait. The copper pulled me over, walked up to the car, and with that classic...

    Boddington's

Spot on! 'Boddies' is just an easy drinking low ABV 'ale' (i.e. non lager). It's okay - I drink a fair bit of it (in cans) as it's often a good price by the case. It was advertised as 'the cream of Manchester' before the brewery was sold and production moved.

    iodine vs Iodophor

As I said it's not the iodine that 'worries' me but the 'solution' in povodine iodine isn't 'just water'. It's a fair point that some of the other chemicals used (not just the iodine) may be found in mouthwash too. The alcohol we drink causes more damage I'm sure.......:)

    Ever returned bad beer?

A bad pint in a pub is a no no! With shop bought I guess it depends on the quantity. I tend to buy bottled beers (or ciders) of different types in singles when I'm 'researching'. I get the occasional beer bottle that has skunked and a few cider bottles that can be so heavily sulphited I...

    iodine vs Iodophor

The old 'Iodine' chestnut!:D 'No rinse' sanitizers don't seem to be approved in the UK so are expensive when you price them at online HBS. I've looked and compared the contents of the 'Idophor' brand (Thanks ajf for giving me the ingredients off the back of your bottle!) to standard...
