Your perfectly fine. The blow off tube keeps the co2 from building up. The airlock only is what gets clogged on people and explodes off at times. Also its general best to rehydrate your yeast prior to pitching the dried stuff. It will increase number of yeast that live through the pitching...

Lots of great things available on the west coast. Stone beers are all available. Green flashs west coast ipa is amazing and very very hoppy. Also russian river is available here but Pliny is still hard to get.

Listen to brewstrongs sanitation episode they have the maker interviewed. Use distilled water and you won't have to wworry about it

Just listened to brew strong on sanitization. Bleach isn't a good choice. Also they differ in strength and lose concentration over time.

7.5 gal pot is kinda small. For full boils you will be boiling about 6.5-7.0 gallons depending on if its a 60 or 90 min boil. Ive lost over a gallon on hoppy ipas due to hops. Also chiller is small. Learn to brew has 60 ft ones for cheap.

You should always try for 6 gal post boil. 5.5 clear wort in fermenter 5 in kegs. Sometimes on my choppy beers I still need an additional .5 gal. Also personal on my stove when I took off the circle piece that spreads the flame out my boils got more vigorous.

What's your fermentation like? Are you making a appropriate starter or pitching a couple packs of liquid?

Make an extra gallon to keep all the hot break, and hops out and allow you to have some extra wheb bottling.
