    I agree on the dryer beers being best. Stones beers hit me deep in my soul and are the best brewery in the usa IMO. Though I love dfh cause there beers are different. More palate expanders for me.

    I would drink one fresh than one every 6 months. beer geek nation said 120 gets real nnice after a year of cellaring. Sam from dfh said after a couple years its starts taking on my shari like qualities.

    This may not be the reddest beer ever but arrogant bastard has a great rich dark red that I find beautiful along with tasting awesome. Jamils near perfect clone was with special B. I just kegged it and the color and flavor is dead on.

    How many gallons of water did you steep it in? Temperature can cause tannin extraction but PH can cause more. If you were steeping in a full volume with little dark malts that can cause a high PH which means more tannin from the steeping grains. Ultimately since you didnt even mention...

    I have the book but havnt gotten around to read it yet. I don't think tthe starter was too large based on jamils reccomendations. I even spilled a little while pouring.

    Wyeast 1098 with a 2 liter 1.045 starter. Beer has a 1.071 OG mashed at 148 for 90 than a 170 degree mash out with a 170 degree 1 gal sparge got 85% efficiency.
