    Fermentation Temp Problem--too high?

    Next time ferment in the basement! If you keep the fermenter sealed it shouldn't risk oxidation(during moving), after all it is filled with Co2, shouldn't be any oxygen left.

    Increased bitterness from too much carbonation

    When i made my black IPA it tasted like molasses until I carbed it. Now its awesome, carbing seems to bring out a little hidden bitterness.

    --Right from the website i posted... Only 2-3 vines should be trained onto each string with 2 strings per plant. All subsequent vines, which can be extensive with older plants should be cut off. Vines are ready to be trained when they are about 12" long and must be gently wrapped clockwise...

    RDWHAHB! ( or craft brew in your case) Let it sit for another week or so. Then bottle. Maybe try cold crashing to clear some haze up a bit. Other than that, sounds like you are on the right track!

    Sneak into Wrigley field and replace all the ivy with hop vines :D On a serious note, I'd grow them on fences that doesn't see a lot of people/activity. Or find people with a lot of land if you can grow on one of their fences. Pay em in beer or maybe they'll let you do it for free. Power...

    Have you seen anyone do this? If so what did they do for shelving and stability.....if losing the center divider added any. I'd imagine a makeshift shelf out of wood or some other material would suffice...then again I'm no engineer.

    DFH Score!

    Why go through the process of "acquiring" a keg when you can just get one from the local recycle depot for about a $1.50 per lb......comes out to about 45 bucks for a retired keg.

    Beer Mixing Suggestions?

    A local brewery mixes their porter with framboise. Nothing I would drink, but my wife enjoys it. They also mix their 9.2% wee heavy(FAT Scotch ale) with a red (ridgetop red) creating FRED. Supposedly its pretty good, but again, nothing I would do.
