    I wouldn't be worried. Even if it was contaminated I don't think it would have killed off the yeast. I would double check that the crack is sealed air tight (and more likely that the whole around the air lock is sealed tight). Also, a little over 2 gallons of empty space takes time to pressurize.

    Thanks. I found some cobalt blue bottles that I thought would be cool to bottle my apfelwein in, but I would hate to use bottles that would have ruined it.

    Anyone happen to know if the color of the bottle you use for appfelwein makes a difference? (I obviously plan on storing it in the dark, though I could see it being drunk outdoors)

    I was planning on giving my first batch (an Irish Red) two weeks in the primary and two weeks in the secondary before bottling, and I plan on having a second batch in my primary by the time I bottle (possible an oatmeal stout). I was wondering though, is there a maximum amount of time you want...

    I just started my first batch of beer this weekend, and you have me nervous now. In general am I going to be safe with just an airlock in my primary (6.5 gal plastic bucket)? BTW, great photos. Did the ceiling clean up ok?

    My carboy is releasing tons of cider scented gas, I'm expecting it to turn bad by tomorrow though.

    I believe I read earlier that the only problem with not using the whole carboy is that you are wasting half a carboy that could be being used to make apfelwein. Someone else will need to tell you about conditioning, my first just started bubbling last night.

    ...hypothetically if I was cleaning the mess from making beer last night and found that I forgot to add the yeast what are the odds I'm going to contaminate the beer if I open the ale pale now and add it (I already added it, just wondering if I'm wasting my time).

    First batch if finally started. Only one small snag, I overfilled the airlock with vodka. My assumption is that this won't be a problem since apfelwein won't blowoff, but I thought I'd check ;)

    okay... was about to start and realized I don't have any instructions for how to sanitize everything. Should I just pour 1.25 gallons of water into the carboy, then add .25 oz star san into the carboy and mix it around, then pour it into a bucket to sanatize my funnel/cap/air lock?

    My kit arrived today, and it came with a long glass thermometer so I should be fine. Good thing too, my Irish red ale has very similar instructions for steeping the grains.

    My instructions say that the S type is for the secondary fermentor and the three piece is for the primary... that's the only reason. Now that I think about it I think someone also said you have to keep an eye on the fluid level in the air lock in the beginning and it looks like the three piece...

    My home brew kit arrived today! Tonight I'm buying the juice to make Apfelwein, tomorrow I'm going to try to find another three piece airlock and start my ale (I didn't realize the kit came with one three piece air lock and one s shaped air lock).

    I used table sugar for Mr. Beer last time and didn't have a problem. It might be that I have my sugar in a clean, air tight container and put it in the bottles using a sterile funnel. Either way I ordered carbing tabs this time to make it simpler. I was wondering, how does the type of sugar...

    Good to know. In that case when the time comes I will just get enough for what I'm bottling short term and beer-bottle the rest.

    I am planning on using Munton's CarbTabs for my next batch. Assuming it's only been a short time since you bottled I would say you're fine. It will be obvious when you open the bottle if it's ok (and by that time either the tabs will be completely dissolved or there will be tons more black...
