    I think I read earlier that from concentrate turns out fine. I assume starting with a tastier juice gives you a tastier apfelwein, but that after the fermentation process the difference will be much smaller than with the original juice..

    I am guessing it's fine. Think of it like this, the gas that was bubbling up the last 4 weeks is what was in the air at the top of the bucket (and that's a lot more room than the empty space in the carboy). Normally you would have far less gas in a carboy, but I doubt it will harm anything.

    Thanks for the advice everyone. My second racking attempt went very well and I transfered almost all the beer and left most of the ... garbage (can't think of the real name right now) in the primary.

    Since Mr. Beer is one stage fermentation do I need to bottle after two weeks, or can I go a few weeks longer in the fermentor and be just as good? (I want to make more this weekend, but my bottles are just starting their two week cold conditiong before I drink them.

    Is there a quality difference between Brewers Best kits and Midwest kits

    Midwest is what I've been using (I just started, so none of my beer is ready to drink yet). They seem to have a far larger variety then Brewers Best, but I have to pay for shipping with them. My real concern is that Brewers Best may be lower quality.

    I recently found that I had an LHBS fairly close to me, but their kits are fairly expensive (Brewers Best). Even factoring shipping the midwest kits often are cheaper. Does anyone know if there is a quality difference between these two brands?

    That's what my brother told me to try next time. I may also upgrade my yeast in future batches, I figure it wasn't worth worrying about my first few times.

    Out of curiosity, what are people doing with their Mr. Beer after they upgrade to a full home brew kit? I was thinking since it has a smaller size and comes with plastic bottles it might ideal to make soda in.
