    Did I screw up?

I think my package said 3-6 hours but I've come to learn whats written on a lot of labels and whats true can be very different. The length of time that the wort sat was what really worried me but I'm assuming its not really any different than someone having bad yeast, letting it sit for a few...

    Did I screw up?

Alright, this is my second batch but first with a vial of liquid yeast and I just need a little reassurance that everything is going to be ok (or not?). I picked up a new digi thermometer to monitor my temps with, and for some reason this batch seemed to take forever to chill down to...

Anyone tried "Holiday Cheer" from the Joy of Home Brewing?

The wort is cooling now, waiting to pitch the yeast before I go to bed. It really did smell great during the boil. I can't wait to try it.

    Temperature swings and brewing

I won't bottle yet, 10 days was gonna be the soonest if the gravity was stabilized but I can push it a few more days, I don't really have a secondary - I do have a bottling bucket but I'm worried about the spigot leaking while I'm gone. If its still dropping by the time I leave then though...

    Temperature swings and brewing

While I was brewing Holiday Cheer from Papazian's book I went ahead and took an sg measurement (since the thief was clean). At 7 days from pitching I'm at 1.023 for a recipe (http://www.crosby-baker.com/ipa.htm) which is supposed to have an F.G. of 1.014. Should I be concerned if this is where...

Anyone tried "Holiday Cheer" from the Joy of Home Brewing?

Just wondering if anyone has tried this recipe. I'm looking for a spicy christmas-y beer for my friends and family to enjoy that isn't too dark. Not many of them like full flavored dark beer or super hoppy IPAs like I do. This recipe seemed to fit the bill for something with moderate body and...

    Hefe smell

Sorry, thought you were talking about the blow-off too.

    Hefe smell

I'm new so take it for what its worth but from my reading (Papazian) the castoff is a nasty mix of hangover-inducing bitter resins from hops and other byproducts of the fermentation. Not for consumption, unless you're a sadist.

    Temperature swings and brewing

It seemed that the most active fermentation was during the first 24-36 hours after the yeast was pitched. I used the yeast that came with the kit (don't have the name right now). I rehydrated it per the instructions on the packet - lukewarm water (that had initially been boiled) for 14 minutes...

    Temperature swings and brewing

Its not an issue of brewing hot. The current temp on the stick on thermometer is 70deg and for most of the time since sat night it has been between 68-70. The exceptions were when my thermostat went renegade and decided to heat our apartment to 80 degrees all night - then it jumped up to about...

    Temperature swings and brewing

So this is not meant to be taken as a "new guy is afraid thread" more as a "new guy is curious and a search has not yielded anything" thread. Relax everyone, I'm not worried and I'm having a microbrew (from a brewery only 25 miles north of me that I just discovered after living here a year)...

First brew - I want to make it better

Too late on not oaking - already done (steamed and put in the primary with the hot wort). I think I'll hold off and finish the kit out as is, bottling after two weeks instead of 7-10 days like the instructions say. Papazian reccomends two weeks in the primary as do some people here - sounds...

First brew - I want to make it better

Alright, alright I'll take it slow. Additionally, I'm looking for something Christmas-y to make next (Even though it might not be ready in time). Some sort of stout. Any recommendations for a recipe geared towards a new guy?

First brew - I want to make it better

Maybe I should clarify - thats drinking wine and scotch. Not producing.

First brew - I want to make it better

Ok, you have to be patient since I'm new at this. I was under the impression that dry hopping might add some more of that hoppy kick to the beer. I guess I'm having trouble separating the bitter characteristics from the more floral / citrus ones. I'm guessing the hoppy kick stems as much or...

First brew - I want to make it better

So to make a long story short, this is my second shot at homebrewing, but my first with beer. The first time was with mead but it never actually fermented (bad yeast?) and after wasting $50 worth of honey I put the hobby down for a few years. When I realized i had no big project for this...
