When moving to a secondary fermenter.....

From everything I've heard its really not necessary to rack to secondary for ales unless you're dry hopping for a very long time. Autolysis (when the yeast cells that are in that layer of trub start breaking down and making the beer taste bad) does not occur fast enough to necessitate racking...

    Possible bad batch?

Just relax. Everything is probably fine. The more you poke and prod the more likely you are to introduce something [edit: something you don't want in the beer that is]. Close up the carboy and put it out of sight until you're ready to bottle/keg. I'm just echoing the advice of the older...

    Possible bad batch?

After 10 days I wouldn't expect the krausen to still be there - all three of my batches have been done with vigorous fermentation within 5-6 days. Looks like yeast that hasn't flocculated or was stuck to the side and fell of during racking floating on top. I wouldn't worry about anything unless...

Anyone tried "Holiday Cheer" from the Joy of Home Brewing?

2 weeks in primary. Bottled one week ago. Tasting at 1 week: Interesting. Orange, ginger and cinnamon all come through. Cinnamon is not spicy though - mostly just the aroma of cinnamon at the finish. Some strange bubblegum/fruity flavors much like I experienced in my first beer (also only...

First brew - I want to make it better

Well, I let it ferment for 3 weeks. Went ahead and bottled one week ago. That process makes me want to buy a kegging system right away! Tasting at 1 week: Actually carb'ing up fairly well. Dominated by a strong fruity, almost bubblegum flavor(??). Not a whole lot of body or maltiness...

True Brew Beer Kit - First time to brew.

<Edited> Meant to type something into the search bar. Oops.

Next beer - Looking to make some (minor) changes

My second batch had a much higher OG than this one and ended up well below its recommended FG in 14 days - I don't think 10 days is much of a stretch. Papazian seems to know his stuff so if he says 10 days I'd believe I'd get drinkable beer in 10 days. Given more time I'd keep it in there for...

Do you groom your man bits?

Use a single blade razor instead of a multi blade if you have a steady hand. Multi blade razors up your chances of ingrown hair, single blade make it a _little_ easier to cut yourself but not much. I've never cut myself. Just my 2 cents.

Next beer - Looking to make some (minor) changes

Alright, I know many of you are against new guys changing recipes but these mods are fairly minor and I'll probably go ahead with them unless someone has a compelling reason not to. So heres the challenge. I have to move on the 19th. If I don't brew before then I'll have to wait quite a...

Anyone tried "Holiday Cheer" from the Joy of Home Brewing?

I'll have to get home to my copy of Joy of Home Brewing for the hop additions. If someone else has a copy on hand feel free to post it. 3 days in the bottle, 18 more to go. At least when it was in the fermenter I could see the airlock bubbling. This is a TRUE test a patience.

Anyone tried "Holiday Cheer" from the Joy of Home Brewing?

Finally bottled on monday after two weeks in the primary. The FG was supposed to be around 1.017 (if I remember right) and I managed to overshoot that a little by getting it down to 1.014. OG was right on. After having just bottled a somewhat disappointing True Brew IPA I was pleasantly...

a note from the impatient brewer

I've found a solution to deal with the noob impatience: Drive 300 miles away from your beer and plan to stay there for a week. Bonus points for downloading all the brewing podcasts you can to make the driving go faster.

    First 2 brews taste awful...

I have a true brew IPA kit in my fermenter, I'll let you know if I experience some of the same issues. Revvy - true brew kit is all LME - the only sugar in the kit is priming sugar. Ingredients are 2x3.3 pounds of LME, dry packaged ale yeast, UK Pilgrim and UK Gold hops stored in nitrogen...

    Did I screw up?

I've actually got a whole semester left. I'm on a co-op right now (extended, well-paid internship for those who aren't familiar) and I graduate this spring. Fortunately I went with plastic only and everything should fit within the original box my kit came in - well except the new beer...

    Did I screw up?

Haha, Thats why I brewed this one. My first batch is 8 days in the primary, this is only my second brew. I won't get to brew again until I move home Dec 19th or possibly back to school in mid january. For some reason moving a full ale pail with living yeasts does not seem appealing for me or...

    Did I screw up?

You know, you read through both of those and you still don't feel good enough. It takes the personal touch of revvy telling you to shut up and be patient to really drive the point home.

    Did I screw up?

That sounds a lot like what I was going to do - except I was going to go and get another vial of the white labs california ale yeast that they sold me and do a starter (today or tomorrow) and if an SG reading weds evening showed not changes just pitch the starter. Worst case (assuming the wort...

    Did I screw up?

So you wouldn't even recommend touching it if there are no signs of fermentation by the end of the week? Not even take a gravity reading before I leave?

    Did I screw up?

24hrs still no signs. After sanitizing my hands as well as the area around the bucket lid I took a peak to see if any kraussen was forming - nothing unless you count the light colored, extremely thin layer of foam on top much like if you mix iced tea. Maybe I'm wrong and that is the kraussen...
