    Tweaked Procedure

This is what I do: Dump 6kg pale into a 5 gallon bucket and 250g crystal for caramelization. Cover with enough water that you have some good headspace. Heat with electric filament until the water at the top starts to boil, periodically stirring at intervals. Switch off the filament, and...

    Extra Long Mash

150F doesnt seem like a low temp at all. What is the temperature of your fridge?

    Wee Heavy first try

I've had this problem too when attempting AG. How much grain did you use? Personally i've made about a dozen batches of AG in total. The brewshop sells 3kg bags of pale ale malt, then I use 1/2 pound of crystal in there. Using this little grain produces a sickly weak batch esp. when you...

    How much water?

I use about 6.5 gallon to make a 5 gallon batch, using about 6.5 pounds of grain in the mash. However my filament heater can only contain about 5.5 gallons without risking a boil over so I collect the remainder of the wort in a glass demi-john and add it to the boil gradually to replace the...

Mini Mash System for Extract Brewers

Ive tried reading as much of this thread as I can but it's very long so i'll have to come back to it. You guys in the US are lucky, I have been seduced by your set-ups but we only have the rectangular coolers in the UK and those fancy looking phalse bottoms arent available either. I just...

    Measuring Mash Temps

I use a digital thermometer and heat my grain in a grain bag using an electric filament heater. It's not as great as the Igloo cooler things apparently but it is still ok. Getting the temp right is critical. Watch over your grain religiously during the mashing process. Keep stirring it from...

    All Grain House Pale Ale

Im actually considering doing one of these myself. At the moment im using just under 7 pounds of maltto make up a 5 gallon batch and then adding a tin of light malt extract to reach the desired gravity. This works good but im starting to realize now that its cheaper just to buy another bag of...

    Brew Day.

Good brew! The ESB looks a little dark like you said, but it's not a problem though. The APA looks more like the caramel colored stuff that I am used to. I like the look of #2 better, although I always seem to prefer my current batch better than the last one.

    Dry-Hemping

A few ounces of skunk weed really adds to the aroma LOL

    Extra Special English Ale

I tried a few swigs of this today as I transferred to secondary. No banana tones at all and the taste was very satisfying. If anything the hops is dead in the middle using 4.7% AA. Next time I may even be tempted to use 5% for extra richness. The black patent is hardly noticeable in this amount.

    how does this recipe sound

Yes that's why i did the block capitals. I wasnt trying to be critical. I was just making my observations. My point is that there are different styles that fall inside the acceptable range. Like the Porter im drinking atm is very good but only because I wanted a porter at the time of brewing.

    Saving Yeast

Btw that link in your signature isnt working. I figure that to recycle the yeast, the likelyhood is i'll crack open a bottle from the last batch, drink 3/4 of it, then use the yeast at the bottom to make a starter. Alternatively I could just some of this 'naturally carbonated' beer from the...

    Saving Yeast

Does it matter if the bottle is half full or does it need to be filled near the brim? Also I read that the primary trub is no good because it contains debris etc that you dispose of when you transfer the wort to the secondary (or the keg/bottles). Also, theoreretically if somebody recycled the...

    how does this recipe sound

I personally dont appreciate honey in beer. Adding it to coffee or herbal teas I get a nice taste, but in beer the flavor is not even noticeable and if anything it gives the texture a slightly waxy mouth feel. It also seems unusual that you are adding Hallertau at 60 min (aroma hops) and Northen...

    Extra Special English Ale

I did this on Tuesday and will be kegging it in a week or so. I dont think i'll be doing anymore partial mashes if I can avoid it. I realized the reason for getting 'watery' brews was that I was shying away from collecting more wort thatn the 5.5 gallon capacity of my boiler. And then I was not...

Nah im still drinking my baltic porter which turned out quite well but is very heavy.

    Extra Special English Ale

Grain Bill: 3kg Crushed Pale 250g Crushed Crystal 1.6kg Pale Malt Extract 60g Black Patent Preboil Volume 6.5 gallon Postboil Volume 5.5 gallon Hops: Half (2oz apparently although it usually weighs more) foil-packed Fuggles for the full duration of the boil. Yeast: Muntons Gold.

Will this be ok? My wort looked like syrup

If it contains high levels of fermentables the viscosity does noticeably thicken. Super-strength brews are really 2-in-1. I hope you added the 3 gallons of top-up water prior to fermentation. Other than that, there's no reason to worry.

    Baltic Porter

Im trying this now. There's not really anything wrong with it as such and I might do another partial mash on my next brew also. Things to note: * Possibly consider chocolate malt instead of brown malt at same ratio or blend thereof. * Have got 500g (92% carbohydrate) Cane Molasses already in...

You guys are going to get me in trouble . . .

I was gonna suggest vodka yeast but Nate seems to know his ****. Your gonna need like 20L of water to get all the sugars out. Well at least 12 litres. I strongly advise you not to jump in and do this unless you are a vet. There's too much at stake here for a learner.
