    What's wrong with my hops?

    Where on the bines was this photo taken, top, middle or bottom ? What are the leaves like on the top of the bine ? The reason Im asking is that the hop bines have set flowers, which is good and now the bine wants to put all its energy into producing seed, so the bottom leaves start to die off...

    I agree with YooperBrew here. If you want to define hop bitternes/flavovour you must start with a base beer. I personally think that you have got too much malt there. Stick with something more neutral. 90mins boil is too much. Try to match your OG with your IBU. 1.040 = IBU 40

    Again, what I have just said is total bollox. Your water has already been through a carbon filter before it goes through the R/O membrane. Have you checked the reading of your waste water for Chlorine? With a six stage unit I would definately use the waste water for brewing.

    Its not the salts and larger part chemicals, its the trace elements that are impossible to replicate. These trace elements are what give regional water its distinctive taste. eg Burton-upon-Trent
