    To become a good brewer...

:off: I was at a fish fry once with an assortment of fresh peppers, and accidentally ate a whole habanero in one bite. I almost cried in front of about 50 strangers and a handful of friends.

    Looking forward to it!

    Dark Belgians

I actually have the book. I just haven't opened it yet (shame on me). I'm really looking forward to it,though. I've had Trois Pistoles, Maudite and the Chimay (Blue). I don't have a great selection in town, but I try to do my research so I'll know what to look for when I go out of town...

    Dark Belgians

I started looking for a Malheur 12 clone (with no luck so far). What are some similar commercial beers to try to find and/or something similar to brew?

Is San Diego Brewing on Steroids?

I've been reading about and DYING to try something (anything) by Hess Brewing. To eat...I don't know about beer selection...is Nick's On The Pier. I've heard only good things. I love Stone, and I hear their bistro is good (in Escondido).

    Beer Road Trip

White Birch is up in NH, and they can be found around Philly. Here's a locator: http://www.whitebirchbrewing.com/home/find-our-beer/store-locator/#map_top I went to the website for Monde Market in Philly, and they had a a pic of some Troegs. Also, if you do go towards Boston - I'd make...

    Beer Road Trip

Dude, I love the Northeast! Lots of good stuff in New England, but in Portland there's Gritty McDuff's and Sebago brewpubs. Maine Beer Co., Rising Tide and Geary's for something to bring home. There are a ton of others around the area and on the way (driving).

    Anyone see or use this?

Yep. Just gravity. No pump yet. I have been putting a cooler under the HLT during the sparge to get a little more force going. The bottom level is about the same height as my 15 gal BK and the ale pail. There is an inch or two gap between the top of the kettle or pail and the ball valve. I...

    Anyone see or use this?

I use this same model King Kooker. I got mine at Sam's Club online, but you can also get them from Amazon. I love the thing and can't imagine any other setup. I heat my water up top. Mash on the bottom level. Drain to the brew kettle on the ground. Then move the kettle onto the bottom...

This was an obsession, but I think brewing is taking over.

Austin Homebrew Oaked Arrogant Bastard Clone brew

I just made one of these 2 weeks ago. OG was 1.066 (a little lower than I wanted) - I plan on keeping it in the primary for 1 month total and in secondary with the oak for 1 week. I also made a parti gyle with this batch that I dubbed Arrogant Grog. I got around 2 gallons at 1.054.

    Brewing software?

I'd like to know more about the differences. Here's another online recipe builder: http://www.brewmasterswarehouse.com/brew-builder And a software available for free download: http://brewtarget.sourceforge.net

Can beer be left to ferment for to long?

That is actually open in another browser. I'm just saving it for when I can read it all in one sitting. :)

Can beer be left to ferment for to long?

How long is too long in an Ale Pail? I've read bulk conditioning/aging should be in a glass carboy or Better Bottle.

Stalled batch must have restarted after bottling! What to do?

Well, I'm certainly no expert...but I would cover them well and see what happens. If they explode, at least you have them contained and you'll have very little mess to clean. If you're really worried about them, go ahead and recap. Or do both. Cover half and recap half. I've only had 2...

    Small beer yeast question

Well, this one is already going strong. I'm still waiting to see activity from the main batch that had 2 packs of Wyeast 1272 (no starter). I'm sure it'll be bubbling over soon enough.
