    How often is too often?

    I have one to two drinks a night and maybe three on a Saturday night. Now brew days are a different story. Gotta "research" the style I'm brewing and gotta keep busy somehow while waiting for the mash or sparge.

    I teach science in a small community in Oregon. We had conferences until eight last night and I'm here eight 'til eight today. So instead of grading papers while I wait for parents, I'm planning my weekend brew day. Seems like a much better use of time and taxpayers' money, right?

    Is it ok to let your wort cool overnight in the brewpot

    I've transferred to a carboy with an airlock and left hot wort in it to cool overnight with no ill affects. I think that would be a better choice than a kettle that doesn't seal as well.

    Yeast is definitely another advanced subject I want to learn about. I do starters, but harvesting/propagating yeast and long term storage are on my "to learn" list.

    Accidental Barley Wine

    I would like to create a full five gallon batch at the same O.G. My boil-off rate was a fluke so do I just keep boiling until I hit that 1.090? Do I need a refractometer to do this accurately? (Always looking for an excuse for more gear.)
