    First thing I'd change out is the poppet. Make sure you use keg lube on the rubber seals/o-rings. It keeps the rubber from drying out and shrinking as well as abrasion down.

    Store bought H20

    I used to buy water in the beginning (1994) but since then I only use PUR filtered tap water. The village sends everyone a water report every year. As long as there are no violations/safety issues, I'm good.

    Force carbonation help

    From what I've learned, cold beer absorbs more CO2 quicker than warm beer. When I rack to a corny I'll purge it and pump some gas in to it (to ensure a good seal). I'll chill it for 24 hours and gas it up while it's cold.

    You made a 1 gal batch of beer? There is no real way of telling if your batch is done unless you take a gravity reading. You could wait 2 weeks and it may not be done. Not that it will take that long, but again, you never know. What's the recipe? You can tell a lot from it.

    Adding pear juice added more sugar to the cider. It has to re-ferment all over again. Pears do not have that much flavor. That's why they use a lot of it for Fruit Cocktail syrup. How much alcohol you get depends on the yeast.

    Wait. If it has a head on it, it's not done. The only way to tell if it's done is by taking a gravity reading. Then another one in 3 days. If they are the same then you can rack it for clearing. But it's not ready to bottle yet.
