    is my wyeast already activated?

My Dead Ringer kit has arrived. The yeast pack defiantly has some gas in it already. it is about 3/4 of an inch thick. Is this just a packaging gas? I can feel something in inside, activator? And hear liquid. I'm brewing this Sunday prior to the Superbowl. What should I do ? open it?

    Boosting ABV?

I added one pound of Belgian dark sugar to a wheat beer mix and regretted it. too much alcohol, it crushed the natural flavor. its now more like liquor. its all in the bottles now, conditioning. I almost dumped it prior to bottle but forum people talked me into bottling it. time will tell...

still have bubbles in airlock...ok to bottle?

My German wheat is at the end of two weeks in fermenter. Gas production has all but ceased. But not quite. Perhaps a burp every 30 minutes or so. My LHBS guy told me to wait until the cup in my three piece airlock is sitting atop the tube with no gas evident. my OG was 1060 and my FG is now at...

    to bottle or ditch?

Today's the day...bottling day, but i'm in a quandary. I've sampled some of my fine work and find it wanting. Its a German wheat, fermenting for 2 weeks at 68+-, its a kit from my LHBS, I followed almost all the instructions (i added a pound of Belgian dark sugar)and as much as I try to love my...

    bottling bucket vs siphon

is there an advantage/ disadvantage to siphon or bucket with a spigot? seems a bucket with a spigot is a no brainer, easier than working a hose and racking cane?

two hearted ale = dead ringer

I have been told that candi sugar is a "simple sugar" and may have caused the cider taste. I should have used more hops to jack it up? Really just wanted a strong taste not more ABV. my LHBS provided what I asked for I just asked for the wrong thing. Kalamazoo...tomorrows brew. "A bird with...

two hearted ale = dead ringer

Many thanks to Billy-Klubb for turning me onto Bells Two Hearted Ale. This brew is FANTASTIC! Feel like I have been on an often meandering quest for the perfect IPA and I've finally found it. Now I must brew it! On Klubb's advice going to try Dear Ringer. Anybody have any opinions or advice? The...
