While boiling the wort I use a lid on the kettle but a friend told me that having a lid on the boil kettle could cause off flavors. I wanted to try to limit the reduction of volume with the lid but this might be a bad idea. what do you think?

if you have a pressure washer it will really scrub the hard to clean stuff. After cleaning I would soak them in sanitizer overnight and you should be good to go. It would be a good idea to replace ALL the o-ring seals on those.

If the recipe water volume is 10 gallons then you need to get a bigger tun. That is a lot of grain for 10 gal of wort.

Can you not just carbonate using your CO2 supply? What will you do with the yeast that drops to the bottom of the keg? It will be right around the pickup tube and get dispensed with the beer.

The only thing I dislike so far is where they placed the heater reset button. Dead center on the very bottom. Hard to get to when it trips off during a boil. And yes ... it will sometimes trip off. Oh yeah ... if you drop and break the glass lid the replacement is about $130 if you can find...

I have made three batches and they are in the last week of fermentation. All three are dark in color. Nothing yet comes close to the pale yellow color I am seeking. Will it clear in the bottle?

OK If you are looking to sell to bars you will need grain based brews and volume. 7 gal batches of extract wont cut it. So start by purchasing equipment that will do 20gal or more per batch. Even that will be short. It aint cheap so your best option might be to strike up some sort of a business...

I am trying to brew a beer like Genny Cream ale or Grolsch. The brew store sold me Dingman's Pilsen grain but the color is way to dark. Is this the correct grain to use?
