    Bottle Conditioning Temperature?

ok yeah that sounds great but the truth is when i let the temp slip down into the 70s fermentation actually stopped, for almost a week until i figured out that temperature was the problem. how will i get carbonation if the yeasts are doing anything? *aren't

    Bottle Conditioning Temperature?

so.. is mid 80s what i need for bottle condition/carbonation too? For my other regular ale brews i've just left the bottles at room temp and they came out fine, but im thinking the yeasties wont work with temps that low.

    Bottle Conditioning Temperature?

So I just bottled the lawnmower de saison kit from Midwest, and kept the fermentation temp in the mid 80's. A couple times the temp dipped during a cold night and the fermentation would cease until it warmed back up. So I'm assuming that to carbonate, the bottles need to be kept around the mid...

Looking for inspiration w/ leftover ingredients!

So i had an unfortunate accident with my last brewing attempt, let just say that the bottom of my brew pot exploded. I lost the malt extract and the yeast i had in a starter. It was going to be a saison, but ive since changed my mind about brewing that. So now heres what i've got: 8oz...

    I am in love....

I have to say at one point in my life I was obsessed, and i know where you're coming from. It was one of the first "good" beers i fell in love with, i thought it tasted just like brown sugar! I still get it often because, like someone else said, many times its the nicest beer on the menu.

    Highland Brewing

    Some new brews

I just drank the Bell's Pale Ale for the first time last night and really enjoyed it. It seemed like a toned down version of their Two Hearted Ale, which is probably one of my favorite beers ever. The Tire Bite is alright, drinkable but nothing special if you ask me.

    Yeast Starter: How Critical?

ok well the problem is i've just talked to my roommates, and we really have to do it tonight or wait till the weekend. Bottom line im wondering, will it work without a starter? I've used white labs vials and dry yeast before without starters, so why not this?

    Yeast Starter: How Critical?

I'm brewing the midwest lawnmower de saison kit tomorrow. I didnt think ahead enough, (im literally typing this as i run out the door) and i didnt make a yeast starter. Im using the Wyeast 3942 belgian smack pack, and since yesterday its been steadily swelling and almost at full capacity...

Extra Saison kit, What can i Do?

would i still use the candi sugar or is that just overkill? Also, what would be a good hop schedule for that?

Extra Saison kit, What can i Do?

I accidentally bought two saison kits instead of one, and i'd like to make something other than the saison with the second kit. The ingredients are as follows: 3.3 lbs gold LME 3.3 lbs wheat LME 1 lb clear candi sugar 8 oz cara-20 8 oz unmalted wheat 1 oz sterling 2 oz goldings and all...

    Saison fermentation, help needed!

After a trip to belgium i've been inspired to brew some of their traditional ales, and will start this week with a saison. I bought the lawnmower de saison from Midwest supplies. In the past, my main concern with fermentation was keeping the bucket cool enough, using ice baths and such...

    My flying dog sadness

Thats funny that you say that, because here in NC I'm starting to get tired of seeing Flying Dog dominating the good beer section of my local grocery stores, despite the fact that i like their beer. I want some variety, and it seems that these places are obsessed with flying dog. Oh well, could...
