That's about the color of mine. It seems to taste fine. Just bottled yesterday. I am looking forward to this in the next few weeks. I love Wits. I will definitely try the late addition next time around and a lighter DME.

The May/June edition of Brew Magazine talks about the Scandanavians using juniper as a hops substitute.

Just a note I did not use LME in this recipe. It was 5.5 lbs of DME. Next time I brew a wheat I will not boil the entire extract and boil 50% near the end.

Is it normal to keep checking on your brew? Is it bubbling? Is it warm enough? Does it smell right(no infection)? I have three kids and I am a protective Dad... Now. Its like I have a fourth. ;-)

Has anyone brewed a Brewers Best Irish Stout? This is my fourth brew and I have never tried Brewers Best. I was wondering if it will be good on it's own or should I play with recipe? Any suggestions would be appreciated!
