Using a 5.5 gallon carboy for smal batch?

Hopefully I'm posting in the right sub-forum. I'm wanting to experiment and do a 2.5 or 3 gallon batch. I know I'll need to buy a 3 gallon carboy or better bottle. I"m wondering if those provide enough head space for primary fermentation or if they are better used as a secondary fermenter...

Another use for Sweet Mead/Wine Yeast

Hello all, I have a vial of WHite Labs Sweet Mead/WIne yeast (description below) that I bought while my first ever batch of JAOM mead was still fermenting. I've decided thatI really don't like the taste of mead (not to offend anyone). Any suggestions for something else I could use the...

    Blueberry Cider

OK. Just bottled today, didn't carb. Overall I was satisfied, but was hoping for more blueberriness to the taste. Tastes like apple cider to me with a twist, altough that twist was $20 worth of blueberry juice. Still, it's some thing nice and diffferent. Here's a question. Do I need to...

    Blueberry Cider

Tusch, From your experience, does this need to be bottled ala wine, or can I do it like beer? I've never corked anything, so I'm a little apprehensive. I wonder if using the Oxygen Barrier caps would work. Any thoughts? Matt

    Blueberry Cider

Update: I moved to secondary about a month ago. It tasted too appleish, so I added another .25gallons blueberry juice. For almost two weeks nothing happened. I was afraid all the yeast was dead/gone. Suddenly, a few bubbles started forming at the top. I guess I'll wait another few weeks and...

    Blueberry Cider

Here's what I'm thinking, largely based on Tusch's recipe. Any thoughts? Should I save the blueberry juice until secondary? Primary: 5 gallons Apple Juice .25 gallons Blueberry Juice (the **** is expensive!) 2 lbs. Frozen Blueberries 1 lbs Light Brown Sugar 1 lbs Clover Honey White Labs...

First Time, Small Batch in one month???

AZ, thank you. I guess I need to work on patience :) One more thing. They mentioned the shortened drink time would be because of the Mead Yeast instead of bread yeast. Matt

First Time, Small Batch in one month???

Hello all. I've homebrewed numerous beers and a couple ciders. I'm thinking about mead. I'd like to do a small batch 1-2 gallons so I don't tie up a larger carboy. I'm also slightly impatient waiting for it to finish. I found this recipe online and was hoping for suggestions to cut it down...
