How many gallons of EdWort's Apfelwein have been made?

I'm delivering a case (24 bottles) to mom today for mothers day. She likes this stuff more than I do. I'm starting another 6 gallon batch. 6050 + 6 = 6056

    Wild Berry Apple Wine

When do you add the remainder of the apple juice?

    Man, I love Apfelwein

RE: Elephant Farts I used Cote Des Blancs yeast along with nutrient and had no odor problems to blame on the dog. Everyone is quite pleased with the finished product. If your friend is new to the hobby, why not wait until he gets home and have him assist in making the entire batch from...

Is that four, one-third cups (one and one-third total), or four and one-third cups?

No you should not use sugar free, just regular old apple juice. The natural sugars in it will also ferment and result in about 75% of the alcohol in the finished product. If you used just apple juice and no dextrose, it would result in about 5-6% ABV. The dextrose adds about 2-3% ABV...

    Christmas Brisket

Ed, Will an egg go all night without any intervention? My ECB needs to be fiddled with every few hours or so. Does it use a water pan for steam? Tron P.S. I took a six pack of Apfelwein to my parents house for Christmas Eve dinner and they loved it. They put in an order for more.

I am wondering about long term storage. I bottled about three weeks ago and it is time to put some of them in the refrigerator, but can I store the rest at room or basement temperature without any problems?

How to stop fermentation of AW?

What is an approximate amount of time for this to happen in AW? Mine was in the primary for 6 weeks and had slowed to a very slow bubble rate. If I do go with Campden tabs, what is the proper procedure?

How to stop fermentation of AW?

About two weeks ago I bottled my first batch of Apfelwein. I had a 5.5 gallon batch going and only 48 bottles, so I first drew off a half gallon into an empty cider jug, then primed and bottled the remainder. No problems so far with the bottled product, but I do notice that when I agitate the...

    Man, I love Apfelwein

As Schlenkerla said, it is usually not available in super markets, but every LHBS (Local Home Brew Store) would have it. If you are like me and don't have one within an hour of you, check out health food stores. There is one a few minutes from me that sells 2 pounds for $4.49. A bit more...

    Man, I love Apfelwein

No, I have only made one batch with 6 gallons and 3 pounds of dextrose. I want to be able to adjust the ABV for future batches so if I know what the ABV of just juice is vs. Ed's recipe vs. my concoction, I can figure out how much more or less corn sugar to add to get where I want to be. I...

I have heard others say that when using cider it never fully clears.

Can anyone remember what the ABV is just fermenting the sugars in the juice without adding any dextrose?

Ahh, I can see that you also suffer from a leaky carboy cap. I used a plastic zip tie and it solved my problems. The tape may tend to get moisture under it over time and not work as well. I did not get a foam like that, what yeast did you use?

    hard cider

If you are looking for something a bit sweeter, you will like Cote Des Blancs better than Montrachet. I wouldn't call it dramatically sweeter, but it does seem to retain a bit more of the apple flavor and it is my favorite yeast in Apfelwein. It is low foaming so you can have a very small...

    hard cider

Since you don't know what it will taste like unsweetened, it would be difficult to know how much lactose you should add to make it "just right". So I would wait until bottling, take a sample and go from there. If you are going to add apple juice to sweeten, it will ferment and change in...

    My Apfelwein experence

You must exercise patience, grasshopper. Apfelwein should be aged for at least 8 weeks before drinking and even longer is better. Now that these 7 people have either tasted it or been present when someone else did, they are going to be resistant to trying it again even if it has mellowed with age.

    Thanksgiving Dinner?

I've got a turkey on the smoker right now, stuffing and green bean casserole in the oven, dinner rolls on the cooling racks, yams ready to go in, and pumpkin pie in the refrigerator (homemade last night). and gravy.... DON'T FORGET THE GRAVY !!! :p

Perhaps the initial activity was the natural sugars in the juice and the honey hasn't started to ferment yet? You may get a secondary burst of activity (but I'm just guessing). Also, I don't have a LBS within an hour of me, but I found dextrose at a health food store about a mile from my...
