I have a 28liter mashtun, (dont know the imperial size,im from sa). But i also went the hole route (1mm holes 12mm apart) And got a stuck mash the first time. Will be cutting slots in it to see if it works better

Hi all Stupid question but should you want to take an sg reading before say the ten day mark or so do you simply open your fermenters tap to extract your brew? Will it not affect the rest of the brew should it not be finished?
