Are you sure you're losing that much? A carboy with a listed capacity of 5 gallons can actually hold more than that if you fill it up to the rim. 5 gallons will usually be right around where the glass starts tapering towards the mouth.

Why? It doesn't change the taste. There are more important issues for home brewers to worry about :) Clarity is great, but is really only aesthetic.

That and the 3.2 store bought beer :( Again, good luck. I have family all around that area. It's certainly more laid back than Dallas and other big cities.

Best bet is a mix of ice, water and rock salt. I've had it freeze canned beer in a matter of 15 mins......

Yeah, I like the place compared to many "in-casino" bars. However, it's pretty much standing room only 80% of the time and the service is spotty. They do have a decent selection of beer, though. I don't go out of my way to go there, but when we stay at NYNY (about 1/3 of the time) we ingest...

Nothing is wrong with that. It'll still ferment fine. Rehydrating is just the optimal preparation of the yeast. Having said that, I don't rehydrate mine either. Haven't had any problems yet. Of course, I'm still a newb :)
