    why a blow off?

    That's what I think most see as an "explosion". Some people are too literal. I got a friend into the hobby a couple of months ago. He brewed AHB's Cannonball Stout. It "exploded" and sent black wort all over the closet. His wife wasn't too happy with his new hobby.....

    To secondary ferment or not. That is the question.

    It would probably improve your beer. A few more weeks of aging improves most styles. Not to mention that you end up with a beer with better clarity if you let it sit in a secondary for a week or two. It would probably have little to no effect on the ABV of the beer as the fermentation should...

    If it's that carbonated after only a week, you might want to put the rest of the batch in the fridge :mug: Someone needs to make a bottle bomb smilie....

    going through withdrawls

    I haven't brewed in over a month, and both batches I have in bottles now are aging for the winter. I'm getting yet another friend into homebrewing, so we're brewing tomorrow after we go by our LHBS and pick up his equipment. :rockin:

    Brewer's Best kits have ingredients for a 5 gallon batch. I wouldn't top it off any more than that, especially on one of your first batches. It'll throw off your gravity (hydrometer) readings. Taking gravity readings on your first few batches helps you understand the process, IMO. I...

    I don't think he's talking about the actual AHB recipes. I think he's talking about the canned kits (Coopers, etc.) that they sell as well.
