    I never went to the one in Munich but I went to the one in Stuttgart many times (stationed in Germany for 5 years). My best suggestion is to be careful the first day and the last day. Those are usually the craziest ones!

    Not sure where the OP has a LHBS (Local Home Brew Store) or not but they should find out if they do. If they do, take the information suggested here and head to a LHBS. Ask the fine people at the LHBS what they would suggest as a beginner kit for a beginner brewer. If they give similar advice...

    What the heck was that?

    When checking the gasket for nicks or cuts, also take it off and clean and sanitize both sides of the gasket and the ceramic/plastic part the gasket goes on.

    I would suggest using a cherry puree instead of cherry extract. If you use a puree, add it to a secondary. If your using extract, add it when you bottle.

    I brewed this on 7/2 with an OG of 1.058. Checked it today and it is at 1.018. Going to check again in a couple of days.

    Bad advice?

    I always stand them upright for the first 3 - 5 days to allow the corks to expand and get a tight seal. After that you can lay them on the sides. If I give them away as gifts, I print up some labels and put "hoods" on them. To shrink them up evenly and tight, I use the steam from a tea kettle...

    Why not just steep your grains in a separate pot and pour it into your brew kettle through a strainer.

    I just did something similar and have it in the bottles conditioning right now. For a base, I used a Kolsch extract kit and kept 1/2 gallon of the base separate for a "control" set.

    using cling wrap instead of an air lock

    +1 to sanitizing whatever you use! I am working on some smaller "experimental" batches using 1 gal and 1/2 gal jugs. Came up short 1 bung/airlock so for that one reaming jug, I used a small glass "spice dish" that the wife uses. Sanitized it and put it over the opening upside down.
