    Buy a three gallon carboy?

    I have a 3 gallon carboy that I use for making some specialty wines that come in 3 gallon kits. Current one is a chocolate raspberry port. Been in the carboy for about a month now, still a few more to go before bottling. So if you might get into wines, go ahead and grab a 3 gallon one!

    This has been a great read! I have only done extract kits and never done any AG brews. I may grab some ingredients to do a gallon test batch and see what I can come up with.

    Tried Mozz with Ricki's kit

    We picked up more milk and used 1/2 a tablet. After adding the citrus acid blend, we heated it all up to 110 and then added the rennit. Came out just fine.

    Mr. Beer Fail!

    I got a Mr. Beer kit last x-mas as well. I decided to return it and got a beginners kit from my LHBS (Local Home Brew Store). Never looked back! Makin wine, beer and cheese now! Great hobby just do not be afraid to go with quality stuff.

    When we look for a new style to brew, we start heading to the local (higher end) liqueur store. We pick up single bottles (that can be reused later) of different types to try at home. When we find one we like, it is off to the LHBS for supplies! We made a Dunkel and we prefer it. Which reminds...

    Tried Mozz with Ricki's kit

    We use milk from a farm that we pick up in glass bottles. We are going to pick up some more and will try 1/2 tablet instead of 1/4 tablet.

    We had the same results as the OP using Ricki's kit. Tried twice with same results. Curds not forming. Been doing some more research and even read Ricki's book. The directions from the kit and from the book do not contain the same steps. Seems they left some information out of the kit...

    For your ice water bath, you can just use water in the sink until you get the initial temp drop (after changing the water out a couple of times) then add the ice. The ice melts so fast because you are initially cooling off the pot, so just let the water do that work.
