    German IPA?!

A few days back I had created a post on here trying to find a clone for Southern Tier's Imperial Red ale, because I really enjoyed how they featured the Hallertau hops in that beer and wanted to try to incorporate that into my beer. Now I'm thinking that maybe an IPA is a good place to feature...

imperial red ale - need help

I think I have figured out what I want to do. I am thinking of taking the Northern Brewer Dead Ringer IPA recipe that I have brewed in the past and changing the hop bill to feature these hops (magnum, tradition, perle). Could this work? Should I make any other changes? Any recommendations...

Caribou Slobber Kit - Harsh Bitterness

That's how I learned it as well. However I did do a lot of research beforehand and knew about temperature control before my first batch. I think this is part of the fun though. Every beer has some way to be improved, some way to be different than the last.

Caribou Slobber Kit - Harsh Bitterness

You can make drinkable beer by following their instructions. You can make BETTER beer by controlling the temperature, making a yeast starter, cold steeping dark grains, using the right water, etc.... I think the instructions are adequate for making drinkable beer. Then as you get into the hobby...

Caribou Slobber Kit - Harsh Bitterness

I think part of what's going on here is that they're trying to create basic instructions for anybody. Then you can improve upon those in any way you'd like. Everybody seems to have their own process

Caribou Slobber Kit - Harsh Bitterness

That makes sense. I steeped my grains at 155 for 30 minutes, and I turned off the gas until I had stirred the lme in, but the beer does seem awfully dark, like a deep mahogany color. Perhaps the flavor I was tasting is due to burnt sugars.

Caribou Slobber Kit - Harsh Bitterness

Also, I am curious. Why is this beer so bitter? The hops in it are low as and there aren't a lot of them

Caribou Slobber Kit - Harsh Bitterness

Wow, excellent suggestions. This beer fermented in the low 60s for about 4-5 weeks. I need to try steeping the grains the way you suggested. I've heard of this but haven't tried it yet. I used wyeast for this batch, but can't remember which. I want to say it was the american ale yeast. I do...

Caribou Slobber Kit - Harsh Bitterness

That is entirely possible. I can describe the bitterness as sharp and maybe soapy or bitter in the same way as bitter greens. Its hard to describe, but it seems to be settling slightly.

Caribou Slobber Kit - Harsh Bitterness

I actually tried one today and it seems that the bite is settling down a bit. Its nice and chocolatey with some earthy hops on the end. Also I stand by your term temp idea. I ferment my ales around 65 F. I used to live in an apartment where it was harder to do this. Since I started controlling...

Caribou Slobber Kit - Harsh Bitterness

I kegged my caribou slobber after 10 days in primary and 3 weeks in secondary. I racked it into the keg ontop of some star san foam. I have noticed that my beer tastes great but then has a very harsh bitter bite to it on the end. I am wondering if the star san may have affected the flavor or if...

Anybody had this beer or tried to clone it?

imperial red ale - need help

Seems liked the dry hops I listed (perle and magnum) are used more for bittering and aren't really aroma hops. But this beer had an incredible aroma. Sweet from the malts, for sure, but also smelled of oranges and quite floral. All I can figure is that they must have dry hopped the hell out of it

imperial red ale - need help

Thank you. I'm aware of magnum and perle hops, but haven't heard of hallertau magnum and hallertau perle. Is this because magnum and perle are derived from hallertau? Also can I get the flavors I'm looking for here in an extract beer?

Awhile back I tried the southern tier big red imperial red ale. What a different tasting beer! The description says this beer features hallertau hops. I noticed the incredible aroma too. Does anybody know what makes up this beer? I think the description mentioned Belgian yeast, but not sure. I...
