    Main difference is personal opinion. Both need to be cleaned after use. I would wager that cleaning the wood would be slightly more difficult but I could be wrong on that. Personally in my SS all in one I use a SS mash paddle.

    which hops go with Briess Pilsen DME?

    I’ve used Pilsner malt with all different types of hops! It really depends on what type of beer you want to brew. I’ve made American Wheat Beers with Pilsner Malt and used Mouteka and Pacifica…I’ve also used Cascade, Citra and Mosaic. The combos are endless!

    No you don’t sound like a crazy person, at least to me. Unfortunately, higher ABV beers with more grain tend to have lower efficiency, so calculating and adjusting with DME to reach your numbers is more my style. I haven’t brewed anything over 1.056 in a long time though.

    If it tastes good why would you throw it away? Makes no sense…who cares what it looks like? Beer may be about tantalizing the senses but you’re drinking it, not staring at it for enjoyment.

    2-row vs Pilsen

    IMO Pils malt is more flavorful than your standard 2-Row. You will probably not taste a huge difference in a Hazy but with something like a German Pils/Helles you would (IMO). ::mug::
