Put a CO2 on the beer and wait a week or two and it's carbed. There is no need to go above serving pressure to force carb a beer. Also their is no way to bleed off the extra pressure after force carbing at a higher pressure is done.
On Youtube this guy shows a series of videos where he growes his grain and malts it and maked beer.

Robert,
My sugestion is to join a brew club. They can help with any knowledge for the big brew and possibly can help with the equipment.
If your lucky some of them may even help with the brew day so you could possibly brew it all at once.
Good luck

I may have to try brewing the results. This sounds like the knida thing that would be fun for a few people to build a recipe from the top ingredients and compare the results and recipes.
Here is how mine is mounted.
Works Well, Variable Speed, Quick removal if I need to use it for actual drilling.

Somebody in this post asked about a better hand dispensing gun. Try This!

The drill does not working very hard. So far I have run about 200 lb thru the mill and the drill performed without a hitch. I'm expecting it to run like that for quite a while.
The drill runs from 0 to 500 RPM.
On the handle of the drill is a Lock for the trigger and a speed control which I use to keep the speed down.
So for it seems to be working well.
