    I try to do several bottle types for each batch. For this one I did 31 12 oz bottles and 10 22 oz bottles. I just feel like you need a different bottle for different occasions!

    If it were me I would go ahead and add nutrient according to the staggered schedule since fermentation has started. However, a more experienced meadmaker may contradict me if I'm wrong!

    I've had meads explode with fermentation. I didn't see you say anything about nutrient, did you add any or use the staggered nutrient addition schedule on the sticky on the Mead forum? Definitely something to look into for next time!

    Blood Orange Hefeweizen

    I am brewing 10 gallons of this beer as I type. Last year I did 5 gallons with Mexican Cara Cara oranges and it was a favorite. This year my wife found Australian blood oranges. I loved this beer last year. I guess that's why I'm making 10 gallons!

    Historical Ales

    When I bottled them I tasted the samples. The Devon white ale was extremely sour. The hopped ale was also sour but a little more balanced. The IPA had a bit of bitterness to it but I wouldn't call it good. I'm receiving judgement for when they are carbonated and cold. I'll post the final...

    Historical Ales

    So due to some film and mold looking stuff growing on these ales I delayed and racked them a few times before bottling them today. I ended up with 6 bottles of the Devon IPA, 7 bottles of Devon Hopped Ale, and 9 bottles of Devon White Ale. Will post some in-glass pictures when its ready.

    Strangely enough, I've been looking for Brazilian beers in Texas to try. I found Xingu but wanted to try something else. What's a good Brazilian beer to keep my eye out for?
